Introducing Collective Culture

Our origin goes all the way back to 2021 when Apple Ridge Farm apprentice Erik Sink decided to explore his obsession with kombucha, enduring many hours of trial and error to perfect his method. He expanded into krauts, calling his brand Untamed Ferments, and it grew a loyal following at farmers markets, cafes, and breweries across the Poconos, Lehigh Valley, and beyond. As the effort grew and evolved, new faces joined the team and we pulled even more farms into the fold to expand on our goal of helping farmers preserve their produce, while creating functional fermented foods and drinks that people love.

In 2025, we decided to shift our model to focus on the collective energy of the many people and farms powering our fermentation operation and celebrate the collaborative nature of our spontaneous ferments. Together, we have been able to offer even more functional fermented foods and drinks. 

Many people know about the benefits of eating fermented foods which include aiding digestion, improving immune health, and potentially even mental health. But from a food storage standpoint, fermenting foods eliminates food waste by allowing farms to preserve ingredients at the peak of their ripeness, making a stable product that lasts for months. When you think about the functional benefits mixed with the benefit of preservation, fermentation seems like an all around positive. And it is!

Fermentation Matters

Because no one of us can do it all, nor do we want to! We’ve found fermentation to be better together. Just like we found that kraut is even better when you add garlic and jalapeños (where are our Mad Kraut fans?), our collective efforts mean we can create even more fermented foods than is possible alone. This collective model also allows us to preserve even more local produce into beneficial, delicious foods, drinks, and condiments for you to enjoy all year round.
